- 1 medium organic butternut squash, peeled and cubed (about 1.5 kg)
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 cups vegetable broth
- 1 cup coconut milk or plant-based cream
- 2 tbsp olive oil
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
- Optional: pumpkin seeds or fresh herbs for garnish
