This warm and cozy cinnamon rice is one of my favorite comfort desserts for chilly days. It’s creamy, naturally sweetened, and 100% vegan – perfect for a cozy evening or even breakfast. This recipe brings back memories of childhood, where a bowl of warm spiced rice meant love, calm, and home.

π Ingredients:
- 1 cup short-grain white rice
- 3 cups plant-based milk (e.g. almond, soy, or oat)
- 1/3 cup maple syrup or agave (adjust to taste)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon (plus more for topping)
- Pinch of salt

- In a saucepan, combine the rice, plant milk, salt, and cinnamon. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for about 20–25 minutes, stirring occasionally.
- When the rice is soft and creamy, remove from heat. Stir in maple syrup and vanilla.
- Let it sit covered for 5 minutes. It will thicken slightly.
- Serve warm, topped with extra cinnamon or chopped nuts if you like.
