🛒 Ingredients:
- 4 medium potatoes, peeled and chopped
- 2 tbsp vegan butter or olive oil
- 1 cup carrots, diced
- 1 cup parsnips, diced
- 1 cup celery, diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup mushrooms, sliced
- 1 cup green peas (fresh or frozen)
- 1 cup vegetable broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish

👩🍳 Instructions:
- Boil potatoes until tender, about 15-20 minutes. Drain and mash with vegan butter or olive oil. Season with salt and pepper.
- Preheat oven to 200°C (400°F).
- In a large pan, heat olive oil and sauté onion and garlic until translucent.
- Add carrots, parsnips, celery, and mushrooms. Cook until vegetables start to soften, about 8-10 minutes.
- Stir in tomato paste, vegetable broth, thyme, salt, and pepper. Simmer until mixture thickens, about 10 minutes.
- Mix in green peas and cook for another 2 minutes.
