- 1 cup pearl barley, rinsed
- 200g organic mushrooms, sliced (e.g., cremini, shiitake)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 3 tbsp olive oil
- 4 cups vegetable broth, warmed
- 1/2 cup dry white wine (optional)
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Optional: vegan Parmesan or nutritional yeast for topping

- Heat 2 tablespoons olive oil in a large pan over medium heat. SautΓ© the onion and garlic until translucent, about 4-5 minutes.

- Continue until barley is tender but still chewy, about 40 minutes.
- Stir in remaining tablespoon of olive oil and chopped parsley. Season with salt and pepper.
